Set your Instant Pot to sous vide for 48 hours at 131°F. When done, remove from the roast from the bag, pat dry, and sear the rump roast on all sides in an oiled cast iron skillet over medium-high heat, basted with butter (optional). When done, remove the rump roast and place it on a cutting board and let it rest. While the seared rump roast is resting, make a delicious au jus from the drippings in the pan and the sous vide juices and serve it with the rump roast.
