Today we're making cashew chicken, a delicious, mildly spicy cashew chicken and broccoli stir-fry with rice for dinner. We sliced our chicken and then marinated the chicken to make it very tender. We stir-fried the broccoli florets, peppers, onions, and cashews in a tasty minced garlic and mildly spicy soy sauce mixture, combining all the flavors together. This recipe is easy to make and tastes amazing and will serve 2-3 guests for dinner, and we serve it topped with sesame seeds. Add salt and pepper to taste. Turn off the burner, remove the chicken, and place it in a bowl; set aside for later. In the same pan, set the burner to medium-high, add a little more oil if needed, and add the bell peppers, onions, and broccoli, and quickly stir-fry them. Don't overcook the vegetables, then add some rice wine (optional), and continue to stir-fry the vegetables for 1-2 minutes; when done to your liking, lower the burner heat to medium-low and add in the soy sauce mixture, the precooked chicken, and cashews and combine everything together, and you're done.
