Here Chef Edoardo specializes in wild game meat. His vision is to bring back ancient recipes, use every part of an animal, be sustainable using local ingredients, and serve incredible Tuscan food. And this was a meal experience like I’ve never had before - from dry aged squab to an aged local deer, and a massive horse steak. This is not the typical Italian food you think of… but let me tell you, it was incredibly local, unique, and delicious. And that deer ragu was definitely a highlight!
