You can order couscous at pretty much all Moroccan restaurants, but when you get a homemade, hand rolled couscous meal, it’s something truly life changing. Couscous is made from semolina, and the process of making it was much more laborious than I had imagined. You need to rinse it and steam it three times over the course of a couple hours. But the result is extra fluffy and extremely soft couscous that melts in your mouth.
