There are times I have to pinch myself living the rv lifestyle! Join us this week in Oceanside, California and see what the rv life is REALLY like. A beach day, sharing some recipes and a weird noise coming from one of our tires. YUM YUM SAUCE RECIPE: 1 cup mayo 2 tbsp ketchup 1 tbsp sugar 1 tbsp rice vinegar 1 tbsp melted salted butter 2 tsp sriracha 1 ½ tsp garlic powder ½ tsp onion powder Water to thin to desired consistency (optional) ~ Combine all ingredients until well mixed HIBACHI RECIPE: 2 zucchini cut into cubes 1-8 oz package of mushrooms quartered 1lb shrimp 2 smoked sausages sliced ¾ stick of butter Steak seasoning to taste 3 cups cooked rice ½ cup soy sauce 4 eggs Brown sliced sausage, remove from blackstone. Add vegetables to blackstone along with steak seasoning and 2 tbsp butter, saute until browned and slightly soft. While the vegetables are cooking, move to the side and add the shrimp. Cook each side for a few minutes until they turn orange and are lightly browned. Remove shrimp. Add cooked rice to the blackstone and fry with remaining butter and 4 eggs. Stir fry until egg scramble. Return the sausage and shrimp to the blackstone. Add the soy sauce and mix everything together on the blackstone. Top with Yum Yum sauce and enjoy! PIMENTO CHEESE RECIPE: 2 cups shredded cheddar cheese ½ c mayo ¼ cup diced pimentos or roasted red peppers ¼ cup diced pickled jalapenos ¼ tsp garlic powder ½ tsp old bay seasoning ¼ tsp onion powder Salt and pepper to taste ~ Combine all ingredients.
