Ingredients 8 cups chicken bone broth 2 cups cooked, shredded chicken (rotisserie or prepped chicken breast/thigh) 6 large eggs 2 tbsp soy sauce or coconut aminos 1 tbsp sesame oil 2 tbsp arrowroot starch or 2 tsp xanthan gum (optional for thickening) 1 tbsp chicken bouillon (optional) 1 green onion, finely sliced Salt and pepper, to taste (or white pepper!) Optional garnishes: chili oil Instructions 1.In a medium saucepan, bring the chicken broth to a simmer. Stir in soy sauce and seasonings 2.If desired, whisk the arrowroot or xanthan gum with a tablespoon of cold water, then add to the simmering broth. Cook for 1–2 minutes until slightly thickened.3. Stir in the 2 cups of shredded chicken and let simmer for 2–3 minutes to heat through.4. In a small bowl, beat the eggs. Gently stir the soup in one direction, and slowly drizzle in the eggs while continuing to stir. They’ll cook into soft ribbons.5. Turn off heat. Taste and season with salt and white pepper.
