Cucumber Buffalo Chicken Boats Ingredients (Serves 2) 2 large cucumbers, halved lengthwise and seeds scooped out 1 cup cooked shredded chicken 3 tbsp buffalo wing sauce (low-sugar or homemade) 2 tbsp cream cheese, softened 2 tbsp ranch or blue cheese dressing 1 tbsp chopped green onions Optional: shredded cheddar cheese, celery sticks for serving Instructions In a bowl, combine shredded chicken, buffalo sauce, cream cheese, and ranch or blue cheese dressing. Spoon the mixture evenly into the hollowed cucumber halves. Sprinkle chopped green onions and shredded cheddar on top if using.
