Prepare Sweet Potatoes/Yams - Clean, peel, cut into chunks, rinse and blanch for 3-5 minutes. 2. Combine remaining ingredients in sauce pan and bring to a boil. Lower heat to simmer. 2. Place blanched SP chunks in prepared jars, shake jar to compact the chunks, then fill with syrup leaving 1 inch head space, de-bubble. 3. Wipe rims with paper towel dipped in white vinegar, place lids & ring, finger tighten. 4. Pressure can 65 minutes for pints or 90 minutes for quarts Pounds of pressure Adjusted for altitude. *I usually double the recipe which gives me about 9 to 10 quarts. **This recipe is for Pressure Canning only. ***I am sorry but I do not know of a no-sugar or low-sugar adaptation. (1) Glazed Sweet Potatoes - Drain reserving syrup, arrange in Baking Dish, bring syrup to boil in sauce pan adding cornstarch to thicken making a glaze, pour some of the glaze over Sweet Potato chunks, bake at 350 degrees for 20 minutes, baste with additional glaze a couple of times, finish under the broiler for a couple of minutes to set the glaze. (2) Whipped Sweet Potatoes - Drain reserving syrup, beat Sweet Potatoes with a mixer adding the syrup until you reach the desired consistency. (3) Sweet Potato Casserole - Prepare Sweet Potatoes as you do for Whipped Sweet Potatoes..... your Sweet Potatoes are already "spiced" so just add your chosen topping and bake.....Easy and quick! (4) Sweet Potato Biscuits, Sweet Potato Pancakes, Breads and Muffins - Drain and reserve syrup, mash Sweet Potato chunks and add to you favorite recipe. But here is how you make it uniquely your own.....the syrup! Whip soften butter with a little of the reserved syrup to use on your Sweet Potato biscuits, pancakes, muffins and breads. Mix your Sweet Potato syrup with Maple Syrup for you pancakes. Today’s canning day is full of surprises from my fall kitchen!
