Ingredients: • 2 bundles (roughly 2 lbs) asparagus • 1 1/2 tbsp vegetable oil • 1/8 tsp salt • 1/8 tsp pepper Directions 1. Preheat oven to 400°F. 2. Wash asparagus spears and trim off the tough ends. Cut asparagus into 3-inch lengths. 3. Place asparagus in a large bowl. Add vegetable oil, salt, and pepper. Toss to coat the asparagus pieces. 4. Place asparagus in a single layer on a parchment-lined baking sheet, being careful not to overcrowd the pan. 5. Roast for 12-15 minutes, or until the asparagus pieces are lightly browned and blistered. Serve and enjoy!
