Individual Meatloaf loaves

Good ol comfort food at its best. These serving sizes loaves, baked on a rack, will put regular meatloaf in a bread pan to shame....in my humble opinion!! KimmysSouthernCooking.com 2 lbs ground meat (beef, venison or turkey) 3/4 c oats or gluten free breadcrumbs 1 med onion, finely chopped 1/2 c ketchup 1/4 c milk 2 large eggs, lightly beaten Salt and pepper to taste Preheat oven to 350F (176C). Combine all ingredients in a large bowl. Shape into small loaves, about a serving size. Place on a greased rack over a cookie sheet. Bake for 45 minutes or until the internal temperature is 165F (74.C). Remove from the oven and baste with the sauce, return to oven for 10-15 minutes or until sauce is caramelized.
