WOW good friends, we have certainly accomplished lots of Massive Food Preservation around here over the years, including home canning over 580 pounds on these several marathon cooking and big batch canning days! We home canned 380 pounds of homegrown and locally grown tomatoes. With those home canned tomatoes we also preserved the tomato juice and freeze dried the tomatoes skins and grounded those into a tomato powder. We also home canned over 100 pounds of farm raised beef and over 100 pounds of locally grown potatoes. Then during a winter snow we home canned many, many, many 😜 pounds of sweet cherry jam. I used this hundreds of pounds of home canned food for feed my large family over 18 months or so. It was so very helpful to have so much of this farm raised meat and vegetables for my big family.
