STOP SAYING YOU NEED TWO INCOMES (WE LIVE ON ONE)

Ingredients 2–3 pounds chicken thighs or chicken breasts 3 bell peppers, sliced (red, green, or yellow) 1 large onion, sliced 3 potatoes, peeled and sliced (optional but traditional for stretching the meal) 3 cloves garlic, minced 1 cup chicken broth 2 tablespoons apple cider vinegar 1 tablespoon brown sugar or molasses 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon paprika 1/2 teaspoon thyme 1 tablespoon butter Instructions 1. Place sliced peppers, onion, and potatoes on the bottom of the crockpot. 2. Lay the chicken pieces on top of the vegetables. 3. Sprinkle salt, pepper, paprika, and thyme over the chicken. 4. In a small bowl mix the chicken broth, apple cider vinegar, and brown sugar. Pour over everything. 5. Add the tablespoon of butter on top. 6. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender. 7. Stir gently before serving so the juices coat the vegetables. Serving Ideas Serve over buttered egg noodles, mashed potatoes, or homemade bread to soak up the broth. Homestead Tip If you want to stretch this meal further, add one cup of sliced carrots or a cup of cooked noodles during the last 20 minutes of cooking.
