Ingredients 6 oz sharp cheddar, shredded (about 1½ cups) 1 cup (125g) all-purpose flour 1½ tsp cornstarch ¼ tsp salt 6 Tbsp (85g) cold unsalted butter 2 Tbsp cold water Optional: flaky sea salt Instructions Blend: Pulse cheddar, flour, cornstarch, and salt in a food processor. Add cold butter and process until sandy. Add water and pulse until dough forms clumps. Chill: Divide in half, pat into squares, wrap, and refrigerate 45 minutes. Roll & Cut: Roll to about ⅛-inch thick. Trim into a square and cut into 1-inch crackers. Poke a small hole in each. Bake: 350°F (177°C) for 16–18 minutes (up to 20 for extra crisp). Cool completely before serving. Store at room temperature up to 1 week.
