It's simple, reliable, and made with good ingredients. On a rainy day, this is exactly what I want in the oven. In this video, I walk through a classic banana bread made from scratch, focusing on small steps that make a big impact. We talk about why I use a kitchen scale instead of measuring cups, why ingredient quality matters, and how choices like buttering the pan with real butter affect flavor and texture all the way to the edges. This banana bread is moist, balanced, and not overly sweet, with chocolate chips folded in at the end. It’s the kind of recipe you can make again and again and trust every time. Here's the recipe: Ingredients 2 cups (10 oz / 315 g) all-purpose flour 1 tsp baking soda 1 tsp baking powder 1/2 tsp kosher salt 3 very ripe bananas, coarsely mashed 1/2 cup (4 oz / 125 g) sour cream 1 tsp vanilla extract 8 Tbsp (1 stick / 4 oz / 125 g) unsalted butter, room temperature 1 cup (7 oz / 220 g) firmly packed light brown sugar 2 eggs 1.5 cups semisweet chocolate chips or 1 cup coarsely chopped toasted walnuts (optional) Instructions: Preheat oven to 350°F (180°C). Grease and lightly flour a 9×5-inch loaf pan. In a bowl, sift together flour, baking soda, baking powder, and salt. Set aside. In another bowl, combine mashed bananas and sour cream. Cream butter and brown sugar until smooth. Add eggs and mix until combined. Add banana, sour cream, and vanilla and mix until incorporated. Add dry ingredients and mix gently until just combined. Batter should remain slightly lumpy. Fold in chocolate chips, if using. Pour batter into prepared pan (no more than two-thirds full). Bake 55–60 minutes, until golden brown and a toothpick inserted in the center comes out clean. Let cool 5 minutes in the pan, then transfer to a wire rack to cool completely before slicing. Serves 8.
