Rib Roast Method 1. Preheat your oven to 500°F. 2. Season your roast (recipe below). 3. Roast at 500°F for 7 minutes per pound. 4. After that time, turn the oven completely off — don’t open the door, don’t peek — and leave it alone with the door closed for 2 hours. 5. After 2 hours, you’ll have a perfect medium-rare roast with even color edge-to-edge and the juiciest texture. This works because the high heat creates that beautiful crust, and then the residual heat gently finishes the roast without overcooking it.
