Best Homemade Fried Rice Recipe | Flavourful & Fresh from the Garden Nigerian Fried Rice with Minced Beef: mixed vegetable fried rice Ingredients Rice: 2 cups (preferably parboiled or long-grain rice) Minced beef: 250g Carrots: 2, diced Mixed vegetables: 1 cup, chopped Green and yellow bell peppers: 1, diced While cabbage: chopped Sweet corn: ½ cup Onions: 1, chopped Garlic: 2 cloves, minced Curry powder: 1 tablespoon Thyme: 1 teaspoon Stock cubes: 2 Chicken or beef stock: 1 cup Vegetable oil: 3 tablespoons Salt: to taste Scotch bonnet (optional): 2-3, minced, for heat Instructions Wash the rice thoroughly with hot water until the water runs clear. Drain. Add chicken or beef stock to the rice. Cover and cook on medium heat until the rice absorbs the stock and is fully cooked (about 10-15 minutes). Stir occasionally to prevent burning, taste and adjust seasoning, if needed. Chop the scotch bonnet peppers. Heat the oil in a large pot.
