Hearty Beef and Barley Bowl 7 SP 1 Small Shallot, minced 3 T White Wine Vinegar 2 T Avocado Oil 2 T Water 1 T Dijon Mustard 1/2 tsp Honey 3/4 tsp Salt 1/2 tsp Pepper 4 C Butternut Squash, Diced 8 oz Steak, sliced 2 C Pearl Barley, Cooked 4 C Baby Arugula 1/3 C Feta Cheese 1. Preheat Oven to 425F. IN a small, airtight container combine Shallot, Vinegar, Oil, Water, Mustard, Honey and 1/4 tsp Salt and 1/4 tsp Pepper; Shake Well 2.Coat a rimmed baking sheet with Cooking Spray. Spread squash in an even layer. Coat Squash with cooking spray and season with remaining Salt and Pepper; roast until lightly browned, 15-20 minutes. 3. While Squash roasts, coat a grill pan with cooking spray. Heat over medium high heat; Season with a little salt and any Salt Free seasoning you would like. Cook turning once, to desired degree of doneness. Remove from heat; Let rest 5 minutes before slicing thinly. 4. Place 1/2 C Barley in 4 bowls. Top each with 1 C Arugula, 1/4 of the Squash and 2 oz. of steak. Drizzle each with 2T Dressing and 1 or 2T of Feta. SERVE!
