Healthy Chicken Chili 1 tsp Avocado Oil 1 Onion, chopped 2 Garlic Cloves, chopped 1 Red Pepper, chopped 1 4oz. can Mild Green Chilis 1 lb. Ground Chicken 1 1/2 tsp Ground Chili 1 tsp Oregano 1 tsp Ground Cumin 1 Bay Leaf 1 tsp Salt 1 tsp Pepper 14 oz. can Stewed Tomatoes 14 oz. can Crushed Tomatoes 1 1/2 Cup Chicken Broth 14 oz. can Kidney Beans, drained and rinsed 1. Heat oil over medium high heat. Add onion and red pepper. Saute until softened. 2. Add the chicken and seasonings. Cook until chicken is browned. 3. Add Tomatoes, chicken broth and kidney beans. Cook at a simmer for 10 minutes. Serve with Non-fat Greek Yogurt. 4 servings of 1.5 Cup.
