Hash Brown Breakfast Cups Serves 12. 2 Smart Points Each 1 lb. Frozen Shredded Hash Brown Potatoes, thawed 2 Large Egg Whites 2 T Melted "I can't believe it's not butter" (ICBINB) 1/2 tsp, Salt 1/2 tsp. Pepper 1 tsp Avocado Oil 1/2 C Onion, finely chopped 1/2 C Peppers (I used Red Pepper) 1 C Canadian Bacon, diced 2 C Fresh Spinach, chopped 1 1/2 C Fat Free Cheddar Cheese, shredded 6 Eggs (plus the two yolks from the whites used above) 1. Preheat your oven to 475 F. Spray Muffin cups with Non-Stick Spray. 2. Place thawed hash browns in a large bowl. Season with the salt and pepper. In another bowl whisk the egg whites to break them up. 3. Add the egg whites, melted ICBINB, salt and pepper to the hash browns and toss to combine. 4. Evenly divide the mixture among 12 muffin cups and firmly press onto the bottom and up the sides of each cup. 5. BAKE for about 15 minutes or until lightly browned. 6. Meanwhile, add the avocado oil to a pan and heat over medium heat. Add onion and red pepper and saute until softened. Add the Spinach and heat until wilted. 7. Lower the oven temperature to 350 F. Remove the hash brown cups from the oven. Evenly divide the spinach mixture amongst them. Add the canadian bacon and the grated cheese. 8. Whisk the eggs in another bowl until well mixed. Carefully pour the eggs into the cups. 9. Bake in a 350 F oven for 15 minutes. Remove, let cool and store in a covered container in the refrigerator for up to 5 days.
