Chicken Red Lentil Curry and Rice 1 lb Chicken, Diced 1/2 LARGE Onion, Diced 5 Cups Vegetable Stock 2 Cups Dried Red Lentils, Rinsed 2T Red Curry Paste 2tsp Garam Masala 2tsp Ginger 2tsp Turmeric 1tsp Sugar 1tsp Salt 3 heaping tsp garlic 6 oz Tomato Paste 1 Cup Light Coconut Milk 4 Cups Cooked Rice Heat Pressure Cooker on Saute. Saute Chicken and Onion until tender. Add next 10 ingredients and mix well. Cook on high pressure for 25 minutes. Natural Release for 5 minutes. Release Steam, stir in COCONUT MILK. Serve 1-1/4 C Curry over 1/2 C Rice.
