Rub seasonings into meat. 2. Place pork and 1 cup water in Instant Pot (or other pressure cooker) and cook at High Pressure for 40 minutes with a 20 minute Natural Release followed by a Quick Release. 3. Remove Pork to a large, tall sided bowl. With a hand mixer, shred meat. 4. Measure out 12 equal portions and top with equal portions of Sauce. For Sauce: 2 C Apple Cider Vinegar 1/2 C No Sugar Added Ketchup 1/4 C Light Brown Sugar (Truvia Blend) 1 tsp Garlic 2 tsp Salt 1. Mix all ingredients in a medium saucepan over medium high heat. When boiling, reduce to a simmer for 15 minutes or until slightly thickened. Set aside to cool until Pork is finished. Serve with Coleslaw! 2 Med Carrots, grated 3 C Shredded Cabbage 1T White Vinegar 2 T Splenda 1 1/2 T Lemon Juice 1/2 C Light Mayonnaise 1/2 tsp. salt 1. Mix seasonings, Mayonnaise and Vinegar in a bowl until well combined. 2. In a large bowl place cabbage and carrot. Add dressing and stir to incorporate.
