Butternut Squash Mac-N-Cheese Serves 6. 8SP each, Ingredients: 10 ounces Elbow Macaroni, Dry 6 slices Bacon, crispy 1 Onion, chopped 4 C Butternut Squash cubes 3 C Chicken Broth (I used Vegetable Broth) 3/4 C Low Fat Milk 1 tsp Dry Mustard Nutmeg, Pinch 3/4 C Sharp Cheddar Cheese, Freshly Grated 1/4 C Parmesan Cheese, Grated Salt and Pepper to taste. 1. In a 5 quart pot, cook macaroni according to manufacturers instruction. Set Aside. 2. In a large skillet, Saute onions until lightly browned, but not burned. 3. Add butternut cubes, 2 cups of broth and salt. Bring to a boil and reduce heat to simmer until squash is tender and most of the liquid has evaporated. 4. Pour Squash and Onions into a large bowl. Add remaining stock, milk and seasonings. Blend with an immersion blender until mixture forms a smooth sauce. 5. Return the sauce to the large pan. Add in pasta, bacon and remaining cheese.
