These knives are stamped 420J stainless steel, but they will perform when sharpened properly. They are great for learning to sharpen on whetstones and freehand technique, and it won't matter if the wife uses them and leaves them in the sink! In this video I show a quick run on a King Deluxe 1k stone and talk about upcoming videos ideas and information about sharpening.
