CHEWY CARROT CAKE COOKIES - Best Recipe - CREAM CHEESE FILLING #cookies

CARROT CAKE SANDWICH COOKIES - RECIPE (Makes 15 sandwich cookies, 30 individual cookies) Toast one cup of pecans at 350 degrees for 6-9 minutes, just untill lightly browned a fragrant. When cool, finely chop and set aside. Measure one cup of freshly grated carrots and set aside. In a mixing bowl, add: 1/3 cup plus 2 Tbsp. granulated sugar 1/3 cup plus 2 Tbsp. packed brown sugar 1 stick unsalted, softened butter 1 tsp. vanilla Mix well and add: 1 large egg Stir in just until barely mixed: 1 1/8 cup (148 grams) all purpose flour 3/4 tsp. cinnamon 3/4 tsp. ginger 1/2 tsp. baking soda 1/2 tsp. salt freshly grated nutmeg to taste Fold in: 1/2 cup chopped raisins (optional) 1 cup grated carrots 1 cup toasted chopped pecans Using a #50 scoop (1 1/4 Tbsp.) scoop dough balls onto parchenemt lined baking sheet (12 cookies per sheet) Bake in a preheated 375 degree oven for about 13 minutes. All ovens are different, so just keep an eye on them. (See video for browning and more.) While the cookies cool, prepare the frosting. CREAM CHEESE FROSTING: 1 stick softened, unsalted butter 1 8oz. block cream cheese, softened 1 tsp. vanilla Mix together well. Add: 18.5 oz. powdered sugar (553 grams, or about 5 cups) Start mixing at low speed, gradually increase mixing speed and beat until fully combined. Fill cooled cookies and enjoy! Store any leftovers and leftover frosting in the refirgerator. Bring to room temp for 30 minutes to an hour before serving.
