Prepare a 13×9 baking dish by spraying it with cooking oil. In a large pot, cook the ground beef and ground pork until just about done, crumbling as it cooks. Add onions and carrots and cook for about 6 more minutes. Add garlic and fennel seeds. Stir and cook for 1 minute. Add the crushed tomatoes, tomato sauce, tomato paste. Then add the beef broth, baseil, oregano, salt and pepper. Allow the sauce to simmer for 1 hour, covered. With 30 minutes left, place the dried lasagna noodles in a 9x13 pan and pour over hot water. Let soak until the sauce is ready, about 30 minutes. Mix the ricotta, egg, fresh parsley, salt, and nutmeg in a bowl. Spread a little sauce on the bottom of the baking dish. Lay in pasta sheets, making sure not to overlap, and top it with 1/3 of the ricotta, mozzarella cheese, meat sauce and Parmesan. Make 3 layers, reserving enough sauce and cheese for the top. On top of the last layer of pasta, spread on the remaining meat sauce and top with mozzarella and Parmesan. Cover the baking dish with tin foil and bake for 25 minutes. Remove the foil and cook for 25 more minutes. Remove from the oven and let cool for 10 minutes before serving. Olive Garden Salad Makes 4 servings Prep 10 1/4 cup olive oil 2 tablespoons white vinegar 1 tablespoon mayonnaise 1/2 tablespoon lemon juice 2 tablespoons Parmesan cheese, finely grated 1 garlic clove, minced 1/2 teaspoon granulated sugar 1/2 teaspoon Italian seasoning 1/4 teaspoon salt ¼ teaspoon ground black pepper 9 ounce bag of romaine salad mix 2 roma tomatoes, sliced 1/2 small red onion, sliced 8 ounces black olives, drained 8 ounces pepperoncinis, drained 2 cups croutons 1 cup parmesan, freshly grated In a jar, mix together the olive oil, white vinegar, mayonnaise, lemon juice, Parmesan cheese, garlic, sugar, Italian seasoning, salt and pepper. Chill until ready to use. In a large salad bowl, combine the romaine, tomatoes, sliced onions, black olives, pepperoncinis, croutons and freshly grated Parmesan. Toss it all together. Pour on the salad dressing. Toss to coat.
