Dad's Book: https://amzn.to/3BWjZHt Black Bean and Kale Chili (Page 126 from The Healthspan Solution) 1½ cups diced yellow onion, divided 3 garlic cloves, minced 2 (15oz) cans low-sodium black beans, drained 1 (15oz) can red kidney beans, drained 1 (28oz) can fire-roasted diced tomatoes 2 tbsp chili powder 2 tsp ground cumin ¾ tsp cayenne 2½ cups Simple Stock (page 96) or low-sodium vegetable broth 1 (6oz) can tomato paste 2-3 cups chopped kale 1. Heat a large saucepan or Dutch oven over medium-high heat. Once hot, sauté 1 cup onion with 1 to 2 tablespoons water- just enough to avoid burning-until the onions are translucent. Add the garlic and sauté for 60 to 90 seconds or until golden, taking care not to scorch. 2. Add the black beans, kidney beans, diced tomatoes, chili powder, cumin, cayenne, broth, and tomato paste. Stir to combine. Bring to a boil. Once boiling, lower heat, cover, and simmer for 40 to 50 minutes. 3. Add the kale during last 15 minutes of cooking. Serve hot, garnished with the remaining ½ cup onion. It also makes a great topping over black rice, quinoa, a baked potato, or a bed of greens.
