How to make it: -Add the cheeses, tomatoes/chilis, corn, seasoning and beer to a baking dish. -Add pellets to smoker box. -Light the back sear burner and place the smoker box next to it. -Once it starts smoking, add the queso mix to the grill. -Let the queso smoke for 45-60 minutes. Stirring occasionally. -While the queso is smoking, fire up the sear side burner and grill off the carne asada. -Once the carne asada is cooked, chop it into bite size pieces. Set aside until the queso is done. -When the queso is all melted and combined, remove from the grill. -Top the queso with the carne asada and cilantro. -Grab a bag of tortilla chips and enjoy!
