Prep: -Slice off the sliver skin on the lamb. Score the fat cap too. -Season the lamb with my West Coast Shake. -Add your pellets to the WFG. -Set to smoker mode at 275F (135C), hit start and let it run through the IGN process. -Add the lamb to the WFG and smoke until it hits 170F (76C). -Add lamb to a pan and all the rest of the ingredients. -Cover pan in foil and place back on the WFG. -Keeping it on the smoker mode, change the temp to 325F (162C). -Cook the lamb until it hits 210F (99C). -Remove and let rest for an hour. -Pull the foil back and shred it in the juice. -Use for tacos or burritos. -Enjoy.
