This spicy dish was invented by a innkeeper in Chengdu for a traveling salesman who arrive late and was hungry for something quick to eat. The salesman like it so much he spread the word about it in his travels. The innkeeper had pockmarks (Ma) and was an older woman (Po) so the dish became known as MaPo Tofu.
