Sharing how I make my delicious sourdough while enjoying a cozy weekend at home and prepping for a productive work week ahead. Add flour and mix. Dough will be sticky. Rest 45 minutes. 2. 15:29 SALT + MIX: Add salt. This is where you’d add the optional reserved water only if dough feels stiff, tears when stretched or is resisting folding. Mix by hand 3-5 minutes. Rest 30 minutes. Dough should be cohesive and tacky. 3. 17:14 STRETCH & FOLDS: Every 30 minutes for 2 hours; 4 sets total. First 2 sets I do both stretch and folds and coil folds. Last 2 sets only coil folds. 4. 19:05 BULK FERMENTATION: After folds, rest for 2 hours at room temp. After dough should feel slightly puffy, soft but not tight, and pulls away from bowl easily. 5. 31:06 PRE-SHAPE: If you have 2 loaves this is where you separate and also where you’d do your inclusion loaf. Pre-shape into a loose round by stretching dough into a rectangle and trifolding. Form into a ball and perform push + pull method. Bench rest 30 minutes on counter covered. 6. 33:53 FINAL SHAPE: Use bench scraper to flip dough over and perform caddy class method. Lift each side and meet in middle. Rotate and repeat. Lift into floured basket, seam side up. Pinch to close seam. Sprinkle flour on top. Cover well. 7. 35:26 COLD PROOF: 12-24 hours. Ready to bake when slight dome, relaxed edges, and springs back slowly when poked. 8. 35:34 PRE-HEAT: Oven to 500 degrees with dutch oven inside for 45 minutes. 9. 36:20 When ready to put in, take out of fridge, flip onto parchment paper upside down. Flour on top and score. 10. Place in preheated dutch oven with parchment paper 11. 37:42 BAKE: 475 degrees with lid on for 30 minutes.
