BEANS + QUINOA = BEANQUOIA Burgers. Inspired by you all, who hate mushy burgers that don't stay together, we're using gluten as a binder and forgoing bread crumbs and flax egg. This is now my go-to veggie burger recipe and I hope you all enjoy it as much as I do. If you know who wrote the recipe here at this now-broken link, please let me know: https://www.humanesociety.org/issues/eating/recipes/sandwiches/kidney-bean-quinoa-burgers.html RECIPE: Ingredients: ½ C dry Quinoa, cooked OR 40g walnuts processed 1 C water 2 Cans Kidney Beans 2 T worcestershire sauce 1/3 C Ketchup ¼ C soy sauce 2 T Mustard 1 T garlic powder 1 T onion powder 1 tsp Cumin ¾ C or 95g Vital Wheat Gluten Steps: Preheat oven to 350F or 175C Rinse a ½ C of quinoa then add to a microwave safe bowl with 1 cup water, stir in a pinch of salt, cover with a plate and microwave for 9 minutes. While that cooks add the onion powder, garlic powder, worcestershire sauce, soy sauce mustard and ketchup to a bowl and stir together. Drain 2 cans of kidney beans and add 3/4s of them to the same bowl as the seasonings. Mash the beans, and once it is a paste, add in the ¼ can that you set aside and mash those only until they are all smooshed and broken. Stir in your cooked quinoa. Add parchment paper to an oven save pan and oil the sheet. Add the VWG and IMMEDIATELY mix together with your hands. Make sure the flour is dispersed in the dough. From the dough, form into 90-150g balls. You may need to use a second sheet. Press down from the middle out, forming into ½” thick-ish or larger patties. Once complete, spray top of patties with oil. Bake at 350F or 175C for 30 min. To make them drier put them in for another 5-10. Let cool to room temp or fry up and enjoy immediately.
