But I actually don't believe a "sustainable" brand exists - I think it's more about prioritizing longevity and quality in our production and consumption. So today I'm going through some of the most used and confused terms in the hopes that it clears up any questions you have and helps make better shopping easier for you! Ingredients: arborio rice onion garlic parsley butternut squash kale parmigiano reggiano butter (only if you want, not necessary - good for extra creaminess) olive oil salt, pepper, QB Directions: - chop your butternut squash, coat lightly with olive oil, salt, pepper and roast for approx 40 mins at 400 F - make, find in your fridge, or call your mom for some broth and heat it up - chop onions, garlic - sautee onions, garlic in a pan for a few mins - add the butternut squash, sautee for a bit - add the arborio rice (don't add the broth yet!) - add a bit of wine, butter, sautee for ONLY A FEW MINS, let the wine cook off a bit but not too much - then start slowly adding your broth ... add more ONLY once the liquid has reduced - once it's cooked to your liking, add parsley, kale, parmigiano - add parmigiano until its a creamy consistency you like!
