Recipe: 2 large eggs 1 cup of plain Greek yogurt 1/2 cup of sugar free maple syrup pinch of salt 1tsp of vanilla 1 tablespoon of margarine 3 medium carrots (about 1 1/2 to 2 cups) 1/2 cup of walnuts 1/2 cup of raisins 1 cup of rolled oats 1 tablespoon of baking powder 1 tablespoon of cinnamon Directions: Preheat your oven to 350 Grate carrots and set aside Beat eggs in a bowl Add margarine, salt and vanilla and mix Add maple syrup and mix Add in yogurt and mix well until creamy Add carrots and mix with spatula Add oatmeal and mix Add walnuts and raisins and mix well Add baking powder and cinnamon and mix Pour batter into a baking pan sprayed with cooking spray Bake at 350 for 35 minutes Cool in pan for 10 minutes then transfer to a cooling rack until cool. Icing: 1 pkg of low fat cream cheese ( I had to use full fat because that is all I could find) Plain Greek yogurt Honey or sweetener 1 orange Using a hand mixer cream 1 package of cream cheese until smooth Add in 1 cup of plain Greek yogurt and mix well until smooth Add 1 tsp of vanilla and 2 tablespoons of honey and mix Zest 1 orange and add to the icing Add 2 tablespoons of orange juice (juice an orange or use orange juice from a container). Pipe or spread icing onto cooled cake and enjoy. (If using icing for this cake make sure you store cake with icing in the fridge) Enjoy! *please see video above*
