I hope you have a wonderful day :) Ingredients : Filling 3 cups of pitted dates 1 cup of water 1/3 cup of brown sugar optional (I left it out) 2 cups of rolled oats 1 cup of AP flour 1 cup of light brown sugar 1/2 teaspoon of salt 1/2 teaspoon of baking powder 1/2 teaspoon of cinnamon 1 cup of butter (cut into small cubes) Directions : Line a 9x9 baking dish with parchment paper Preheat oven to 350 *NOTE* You can add 1/3 cup of brown sugar to the date mixture (I left it out) Roughly chop dates into smaller pieces Place dates and water into a sauce pan and cook on a low to medium heat bringing to a simmer or small boil stirring constantly . You are looking for the dates to soak up the water and become soft. This could take from 5-10 minutes. Once the dates are soft you can put them in the blender or use a fork to mash them up to a jam consistency (see video) Set aside. Oatmeal top and base: In a bowl or a food processor blend oats, flour , butter, brown sugar, cinnamon, baking powder and salt until you get a crumbly texture Press 1/2 of the oatmeal base into your 9x9 pan and press firmly Spread date mixture over the bottom base I add an extra 1/3 cup of oats to the top layer ingredients (just something my mom did) and mix, Then put the oat mixture on top of the date layer and spread evenly. Bake at 350 for 40-45 minutes Enjoy (Please see video)
